Alright, so I finally sat down this week and made a meal plan! The first new recipe I tried was for eggplant parmesan. It was awesome, I really enjoyed it and would certainly make it again! Unfortunately because of the amount of oil used to fry the eggplant, it is not the most points friendly meal. However, it was mighty tasty! Honestly, it took longer to make than I thought, and thank goodness I didn't really have plans tonight... other than the gym of course!
Needless to say I will be eating leftovers for a few days, I also managed to freeze 6 portions so that will be handy on days where I have less time to cook.
PS: Please excuse the missing piece, I forgot to take a picture before eating... lesson learned:)
