I know making a Greek salad is not rocket science, but this recipe just has the right proportions and it is super low in Points as well. Really all you have to count is the feta (I use light feta), and the oil that is in the dressing, which is barely absorbed by the veggies.
I always have my mom make this for me when I am at home... ie right now, that is why I am thinking of it, so I decided I would spread the wealth, here it is;
Mom's Greek Salad
- 2 cups diced, seeded, tomatoes
- 2 cups diced cucumbers
- 1 cup cubed feta cheese (approx. 8 oz)
- 1/2 cup thinly sliced red onion
- 1/4 cup black olives (OPTIONAL)
* Combine above ingredients in serving bowl.
- 2 tablespoons white vinegar
- 2 tablespoons olive oil
- 1/2 tsp minced garlic
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- black pepper
* Combine above ingredients in a separate bowl, and drizzle over salad, toss.
